Shaft packing

Before I re install my 4-108, I want to replace my shaft packing. My associate says it's easy and that changing the shaft packing out while the boats in the water is easy, and we won't sink the boat.

I have visions of my boat on the bottom, because of some unforeseen complication."

Gents, what say you. My options are R&R the shaft thru hull packing in the water, or wait put the boat on the hard, replace the packing then set the motor.

If I pull the boat, I have five days free, thought I would do the bottom in that five day period.

33 ft boat , is this a realistic time table with two people sanding.
