Rust in steel water tanks

I have a Roberts 43 in steel. It has sat in the water for 6 years and I purchased last year. I’ve replaced all fuel lines (old ones were clear plastic) and in the process of changing out water lines and putting a sender in the water tanks to let me know how much water I have, have opened the inspection plate in the first of four tanks total 250 gal, and i see the water is a rusty color. I will remove all water and need to deal with rust. It does not appear to be a lot. I want to then coat tanks so this doesn’t happen again. What are recommendations. I have thought of using epoxy coat but don’t know how this will effect the water.
Open to suggestions.

Use a coating for potable water. International paint makes 3 coatings.
I've used this one. It lasts a long time. Maybe the life of the boat.
