Experience in any case helps reduce the stress here. I have an electronic monitor that works pretty well, but what I've really learned is that 8 person-days on the boat = full holding tank. That's what I use for planning and management purposes; the monitor is now just confirmation.

you could always install an inspection port on top of the tank .. open and see what the level is. open and close quickly
