You can buy household water makers that work on that principle. Electricity to water is high though.

Ships have had "evaporators" for over 100 years which produce incredibly pure fresh water. Steam turbine ships require a source of extremely pure fresh water.

Perhaps something with a much scaled down similar design could be adapted to a pleasure boat?
