Patrigo, if the splice can slide to choke tighter on the thimble, you have negated the purpose of the brummel, which is to lock the eye size so it doesn't change. The only reason to do short though long then long through short is to achieve this lock. As you've noted, doing it the other way doesn't achieve the lock: you're better off in that case just doing a straight bury without any shenanigans and simply pulling the eye tight around the thimble by snugging up the tail before you taper. You can keep it tight then with a lockstitch or a whipping.
FWIW, I am a professional rigger: my job is to stand at a bench all day and splice rope.

That's the word of authority

For the OP -- I know the problem you are dealing with as I've faced it myself.

I tried not using brummels and just stitching the splice after pulling it tight around the low friction ring, but I don't like this method for different reasons, including, among others, my having crap sewing skills.

With practice I finally figured out how to make the loop just the right size so that I could just barely press the ring into it after the splice was made, and I have about a dozen of such constructions on my boat which are working fine for years by now without any problems.

Pay attention to Ben -- he knows what he's talking about

And practice, practice, practice -- ropework, for us amateurs, just takes a lot of practice to finally gain some competency in. Really good practice is to pull it apart and do it over again, and again, and again, until you're really sure it's right. And toss the piece of rope and start over with a fresh one if necessary. Don't try to conserve either time or material, as you work on this competency, is my advice.
