Yes, the only part that needs replacement each time is the wedge. The rest of the fitting is reusable. The wedges are inexpensive and readily available.

I’ve never seen a poured fitting fail. The wire, yes but not the fitting itself.
I’ve never seen a Sta-Lok fitting fail. The wire, yes, but not the fitting itself.
I’ve never seen a Norseman fitting fail. I’ve seen cones or wedges split inside and they still hold onto the wire. I’ve seen Sta-Lock so over tightened the stainless threads were damaged but the fitting did not fail. Formers mangled as well.
The statement they cannot be reused applies to a fraction of a percent at best.
The simple reason we urge every sailor to do their own rigging or at lease learn what is involved is this...how, once you leave the yard...how do you know what condition your rig is in.
How can you inspect its condition. Is the rig strong and do you know where to look for flaws. It’s not about saving money, it’s about being a competent sailor.

They supply kits based on Specs. for your boat.
You supply the options for wire size, and Ect.

We had our standing rigging replaced by Caraibe Greement in Le Marin in February. We are a 50ft cutter and we replaced both the Genoa and Staysail furlers. From memory the cost was around Euros14,000. Your quote seems reasonable.

As I remember, there are two rigging shops in Grenada; Turbulence and MSB Rigging. Why not get quotes from both?

I've owned a boat where the previous owner had the rigging done there, at Turbulence in Grenada. I've also had them do repairs for me. I've been satisfied with both the price and service in the past. As far as your numbers go, I don't think you're too far off.

In Grenada you have affordable options.

Power Boats in Trinidad is where we replaced some of ours. I believe also good sources in Rodney Bay, St Lucia. You may also do well in St Martin or Le Marin, Martinique.

Guess it includes un-masting and stepping up again, crane etc. this is at the high end of a US (greedy) boatyard charge. But in the Grenadines you have no competition and sailing to Martinique or Sint Maarten isn’t the best plan right now - especially in Martinique you would probably pay around 4-5K in total. If you can wait for the winter, I would recommend going there, especially if it is on your cruising plan. You can contact the rigger in Le Marin to get a quote in advance and decide. FGK in Sint Maarten are excellent riggers as well.

just for comparison, at papeete (FP) we are quoted tad over 8,600 euro to replace all standing rigging (exc forestay) on our 44' cat. this is triple diamonds + upper & lower side stays.

electrical work to connect / disconnect extra

your price seems fair to us, however FP is notoriously expensive

I priced out a 38’ Jeanneau not due yet but forecasting future costs $4,300.00 CDN
The price included hardware. I also looked at fibre which was $5,800.00. That was just the rigging which we take down every year like clock work and no big deal clipping on a new set. Tuning eeeeeek dunno

2 new shrouds on my boat were $650 the pair. 50' 3/8" 1x19 US stainless. Reused my Norsemans and Turnbuckles. R&W Ropes (New Bedford, MA). I installed them myself. Forestay would have been similar ($325) but didn't need it.

Turnbuckles rarely go bad if they are bronze. Mine are 40 year old Gibb.

53' rotating carbon wingmast, 25 years old.

I doubt your wire is bad after 15 years. Are there discolored or broken strands? Your rig is low load compared to mine. My shrouds lasted 25 years and 30,000 miles, and I torque the bejesus out of them.
