Evaporator icing is primarily a moisture problem, [as previously noted] often caused by leaky door/hatch gaskets, allowing warm & moist outside air, into the fridge.
Water will always condense, and collect at the coldest point [evaporator], because cold air can hold less moisture, than warm air.
Icing can also be caused by very high ambient temperatures, or a very low thermostat setting; both causing longer compressor run times. The longer run time doesn’t allow condensation to drip off the evaporator plate, which then freezes.
Placing high moisture, or hot foods, into the fridge, can also cause condensation, as will frequent door/hatch opening.

And frequent door opening is why the most efficent fidges are chest fridges, not front opening fridges, as the front opener dumps all the cool air out on the deck each time the door is opened.
So the compressor has to run longer as it is constantly being asked to cool warm moist air, which also does nothing for the condensation issue.
Drawer fridges are probably an in-between solution for those who complain about digging around in the depths of the cold box. Havign multiple drawers also makes sense, as one can be filled with the 'in demand' items and the other for longer term used less often stuff.

I actually discovered a slow leak in the coupling of the lines, under the foam insulation. And of course the refrigerant was empty...so first assessment was wrong. And the simple trouble shooting table in the manual was bang on. Took minutes to start cooling again once that was fixed and it's now 5 degrees in the box again - yay!
