OE32 is a double-ender, and it weighs somewhere between 6000-6500 kg.

I am planning to use anchor that weighs 20kg (Mantus or Rocna) and plenty of chain. I do realise that it is advisable to size the anchoring gear conservatively, but the Seatiger seems a little overkill to me. It is also considerably heavier and bulkier than the Hyspeed. I have not been able to find much useful information on how to size the old Simpson-Lawrence windlasses, it seems that Hyspeeds are/were used on Westsail 32 and Alberg 37, but then again Seatiger seems to be quite common on eg. BCC28.

What are your thoughts on this?

My PSC34 is not much heavier than your OE32 (by the way, she's a lovely design). The PSC34s of the mid-90s were fitted with SL555s. I recently rebuilt the 555, not a bad job. A few little quirks but relatively simple device. That's why people love them.

I ended up going with a Mantus 15Kg anchor. I haven't replaced the chain yet. The PO had 5/16" BBB, which didn't fit the gypsy when under strain. I've been told by John at SL-Spares that 5/16" G43 will fit, but SL specs only their own 9.5mm, 3/8" BBB and Hi-test, or most European 10mm.

Nevertheless, I doubt that you will regret going with the 555.
