Cockpit Table Restoration

The wood on my cockpit table is in bad shape. It appears to be 1/8" (3 mm) thick plywood. My first inclination was to replace it with a piece of plywood with an oak or teak vaneer but I thought I would reach out to the community to see if anyone has come up with alternatives such as plexiglass, or some other type of product that would stand up to harsh sun better than wood.
