Insurance for shorthanded crew

I know this has been up as a topic before but I couldn't find the thread.
We are planning on crossing the Atlantic in May, just me and my husband. We have Pantaenius and just found out that we need a third crew, which we don't want. A couple of things;
- Someone said that a windvane counts as a third crew. Which Pantaenius denied when we asked. Anyone has experience with that?
- The European branch of Pantaenius allow shorthanded crew but not single handed. Then we looked in to insure our boat in Sweden, since we are also Swedish citizen, but then you need to register the boat in Sweden/Europe which we really don't want to because we are worried about sales tax and so on. Anyone with any experience with this?
- Any recommendations of Insurance companies that allow shorthanded crew for an Atlantic crossing?

We have had a crew of 2 for 12 years. We have sailed most of the Carib,, Atlantic crossing, most of the Med and all the Black Sea. Only 2 of us.


We use IMIS and work with us each year as we set up our sailing program for the year.
