Once you have your instrument data available over wifi then you can use waterproof Android phones as your exterior displays and Android tablets for interior displays. They look smart and it's a huge saving using standard hardware.
There are now rugged phones from ulefone, doogee and blackview starting at about £100 with Qi wireless charging.
With wireless charging you can keep all the waterproof ports closed and stick the smartphone with velcro to a wireless charger mounted in a bulkhead, then you can just grab your instrument and take it elsewhere when you want. No cables!
I'm just starting with this setup, going well so far but must check compass safe distance of the qi chargers!

For an nmea to WiFi gateway you can use the pypilot or openplotter with a cheap rs422 to usb adapter or you can make a dedicated bridge for under as tenner with an esp32 or esp8266 and an rs422 UART adapter.

DIY boat electronics starting from scratch what would you use

I dont have a system up yet so I cannot comment on what I have, but...

For mine, I would like
Water temp in FT
Water level in ST
Ambient air temp

I think PH might be nice as well as sun intensity. What or why do you think you TDS and ORP? What does that affect?

Colour display is a bonus, but most important is the inclusion of the buttons ready and working.
