Multi data types to wifi devices question

Hoping those that know more than me about these can help steer me in the right direction.

I have a seatalk depth sounder, NEMA0183 from a Airmar 200WX, 2 Raymarine auto pilots with sea talk and NEMA0183, AIS on NEMA0183 and will be adding a NEMA2000 backbone. All of this is/was feeding information to an old Garmin chartplotter which I don't use anymore and a st60 depth, st60 wind, st6000 auto pilot control head. It was being converted by a Raymarine E85001 converter that no longer works.

My current goal is to be able to hook up the seatalk and NEMA0183 devices and send that info over wifi. I will be replacing the current depth sounder with a 810dst unit and will start a NEMA2000 network at the same time. The two devices below are what I have found as options. Are there others? And which one do you feel is the best for my purposes.

The main difference in the units seems to be that the Quark unit has a built in AIS and GPS. The AIS is receive only so big picture I am not sure if I care about that.
