Combine the clamshell and little hat ideas: find or build a hinged cover with a hole in the bottom that accepts the cable that plugs in. Similar to the weather covers on exterior outlets on houses (North American houses anyway).

Try Bulgin connectors. I use these on all my deck mounted connections. Don't use them for RJ-45 but I do use them in some very extreme conditions - like for a corded windlass control in the anchor well. The caps are watertight O-ring sealed and they are all plastic so no issues with submersion in seawater when the going gets rough. That connector in the anchor well is there if the cordless control breaks down (it hasn't) and for when the wife uses the windlass to pull me up the mast - no time lag like the cordless. They come in a variety of mounting schemes.

Better than any "marine" connector I have ever seen in a marine store. I have no commercial interest in them, just a happy camper. In use over 12 years and never had to replace one and never a leak. Only caveat is that the connectors and caps are a very fine thread and care is necessary to join them.

Followup: After a month or so of using this new fitting, including many rain storms and driving wind 30+k (at the dock), I have had no problems with water ingress, like with the Amphenol. Frankly, I am surprised since this is a far cheaper fitting ($18 vs over $50 for the Amphenol) (both are Chinese companies). Both the Amphenol and the CNLINKO are IP67 rated.

However, I also ordered one of these (made by Bulgin - thanks Stormalong) from DigiKey, in case the CNLINKO fails -- this one is rated at IP68 compared to the Amphenol and CNLINKO which are IP67.

It was very costly compared to the others (> $100) but I am committed to finding a proper watertight fitting with RJ45 connectors. For now the CNLINKO is working great, if it fails, the Bulgin will be my last hope before I give up on RJ45. (I am stubborn like that).

SS Gooseneck thru deck fitting for wiring.
Make your joint inside where it's dry.
