ST4000 outputs compass information on Seatalk.

The appropriate model of vYacht router will translate the Seatalk into HDG sentences (and depth, etc. if you had additional instruments), but there's currently a bug in the code that causes it to apply the magnetic variation incorrectly. He is working on a fix to the code. I do not recommend purchasing it until his fix is complete and verified.

Hakan, Manitu, Rhythm Doctor and others thanks for all the input. We seem to be coming full circle and are back to incorporating a heading sensor given the capabilities of my current equipment and my desire to keep it relatively simple.

I will be looking into this all further and come back with what I find but for now there is a lot to digest and perhaps most importantly some clarification and prioritisation of my objectives.
