Is NMEA sentance Translation Possible?

Can I use OpenCPN to translate NMEA sentances? My wind instrument outputs one format and my autohelm accepts it in a different format. Can I have OpenCPN change the message format before outputting it to a port?

The conversion you are asking for probably can be done with one of the NMEA183 multiplexers available. I've used the Brookhouse Mux to convert an RMC sentence to a CGA sentence. The device is user-programmable.
If you are interested in this approach go to the Brookhouse website and send an email to Wout with the specific format change you need. If Wout determines the conversion can be performed he will likely provide you with the script.
