Re: Boat and Croissants

My sister dropped off Croissants this morning on her way somewhere.

I roasted some Colombian and Brazilian coffee beans a few days ago and also some Indian Cherry Robusta. With the Robusta, I made 300 grams of Torrefacto (roasted with sugar).

So I made up a blend of Colombian/Brazilian and 30% Robusta. Put it in the grinder and then pulled an espresso or two.

Goes well with the Croissants............. Come on over Babs........

First the "Ensaïmada from a packet" faux pas, and now you're admitting that you enjoy ruining a good blend by committing the sin of roasting Robusta with sugar?

Baabs will not be impressed by your masochistic tendencies .

She may be impressed with his tenacity though. "Wear 'em down Weave" he is known as at his locale.

Hmmmmmm. You could be right. Baabs does seem to be on the brink of yielding. Weavis may be roasting with sugar to boost his stamina, extra bitterness be damned. Weave, maybe try adding a little confiture to your croissant as well? It pays to be prepared .

Hmm...... We will have to have a little chat about the characteristics of Coffee sometime........ The addition of sugar modifies the extreme bitterness of the Robusta, (which is used as a filler in most instant coffee and cheaper 'blends' found in coffee shops), and enhances the Arabica coffee, giving it a fuller taste without drying out the taste buds..... It does not add 'sweetness' as such.

I use it in Colombian blends as it give a kick to it.

It is especially good with milk based coffees.......

This is not the same as having a single origin espresso.
