You just can't cut a real croissant in half like that, it's impossible. The only way of eating one is to break off small portions, smell the fragrance and if adding anything, spoon it on, pause to feel your mouth water in anticipation, then slowly close your lips around those the buttery flakes. The 'anything' should preferably be luscious ruby red homemade raspberry jam.

Repeat.

It is a ritual and part of the whole experience.

Afraid so.
When I was in Florida, I was lucky that we had a Belgian bakery who made the real thing. The baker was more French than Belgique. When the mood struck him, he would come in at 4am and start drinking instead of baking and there would be nothing for the day.....

When he was on form, the pastries and bread were formidable.

As for ms baabs.... I wonder if I am more French than she is. n'est-il pas?

Well, the French must just cringe. That is corruption of one of the most basic pleasures in life. To add insult to injury it looks like it came out of a frozen packet. Even I am cringing LOL. Then again, I have always suspected I was French in another life .

I have always said that 3 things the French do without peer, pastry, coffee, wine. I prefer homemade strawberry, blueberry, blackberry jam and butter with my croissant. It sounds like that baker has it down right, I am afraid in my case there might be more drinking than baking.
