I sugest you look at the sinking of the lagoon 500 for a rare look into how the boat is assembled. Glue and foam are a common theme, as is a design with no watertight bulkheads.

You may want to do your home work as any skipper that puts a boat is reverse because he has run over fishing nets with his dinghy in the water BEHIND him is going to have trouble, even more so when he tries to beach the boat and does a runner with all doors wide open and an incoming tide.....

They do not trigger in oil, or diesel. There are also oil-water separators.

Poor engineering is a defect.
"Poor engineering" is a very subjective term. I'm just trying to explain the DIFFERENCE between defects and workable systems designed for good reason which that owners may choose to upgrade.

"Water only" bilge switches may not conform with EC compliance. I'm not sure about that, but I wouldn't be surprised, as I've found them to be very unreliable. Oil can adhere to them and render them inoperable. I consider them "poor engineering".
