Re-doing Countertops

So we have a 2011 Lagoon 450, and we are doing some updates... nothing major... just some cosmetic updates, and I'm wondering if anyone has replaced, or updated their countertops.

Our current countertops are a dull white cheap version of a corian type countertop, and there is a wooden trim that extends above the countertop. I'm wondering how easy it would be to replace. There is a bead of silicone caulk between the countertop and wood trim, so I'm assuming that the countertop could lift out, but I'm not certain. I'm not opposed to lifting it out for replacement. Or even doing an epoxy pour on top.

So, I'm looking for anyone who has updated theirs.. what have you done? did you need to remove the trim, or were you able to replace without removing the trim piece? or did you do something else?

We replaced ours 2016 450 but it doesn't have the trim of your model. The big hassle was the original counter top was stuck to the cabinet tops. To remove it I had to break it up into pieces.Click image for larger version

We experienced the same thing when we remodeled our house.
