Building Frame for Flexible Solar Panels?

I'm looking to install a couple solar panels over my Bimini this winter while the boat is on the hard. The boat is used predominately inshore sailing with the occasional coastal trip. Mostly weekend trips to 1 week voyages at a time. I'm really looking to add enough power to run my fridge all season which is a SeaFrost BD unit. I know I can run it off 200w but I seem to keep seeing a lot of people suggesting to go a bit bigger now vs later. Other loads would be typical house loads, lights, MFD, radar, nav gear etc.

My downside is my Bimini doesn't have wide enough panels such that I would have to install flexible panels over a tube support which I've read is a long term risk to micro cracking and potential for fire etc. Keep in mind the boat is only floating 4-5 months a year.

Options: Hard panels, either 200W or 350W for a small increase in footprint and weight. Cost is neg. It's about 50-60lbs of weight on the 1"SS Bimini frame or else make some type of frame to put flex panels on.

Looking for some real world advice to go one direction or the other. Both in terms over oversize panels and hard/soft.
