And , Yes, they are very sensitive to voltage drops, so , at the very least I would run a direct connection (with fuse or breaker) from the batteries to the fridge and see if it will get by. If not , add another battery to the mix to keep the voltage up at night.
Im sorry but I must disagree with the bank being to small.
On the spencer we were running a technautics cool blue system off of a single 220 ah bank of 2gc2 samsclub batteries with no issues.
As far as the issue you are having I also would suspect the wiring and connections.
The blinking led is actually error codes . What is the fridge telling you?

Well that is about as efficient a system as you'll get (outside of insulation, most important but separate issue).

But I agree 360AH should be (barely) enough for even a very inefficient system.

Our dometic 12/240 fridge had a similar issue with the compressor not starting during the night though it would try to when running off the house bank.

Turned out after investigation to be a faulty power converter unit which was overly sensitive to any voltage under 12.6.

Get rid of the cigarette lighter plug the spring loaded tips (specifically)
the spring gets week is probably not making a good connection.
Take the plug apart and you will notice the spring is blue from getting hot.

Yes, first wire direct or use a deans connector or other good connector.
And possibly along the same problem, your battery bank is not topped up before noon, your charger may be going into float by then, but your bank is not charged, it can't be, that wasn't enough time.
If wiring direct does not fix your issue, it may be that your bank is pretty discharged at the beginning of the night and the low voltage cut is operating as it should.
