You can tap 12v out the the 48v bank just for starting, this will cause no problem at all as it is not a constant tap, just a starting the engine tap.
Then to run the 12v engine and engine instruments, use a 48- 12v victron converter.
Thats effectively what I just started doing.

I got my first LiFePo4 battery about 6 months ago. It primarily gets used to run a trolling motor. It also gets used to run an inverter at times. It has had infrequent use & has sat at 100% SOC for 80% of the time. I just ran 3 cycles from full discharge @ about 50 amps to full charge with a 35 amp automatic smart charger that is set for the correct chemistry. On the last charge, I monitored the amp hours. They read 96. The battery is specified as 100AH. Unfortunately, I did not do a similar test when the battery was new.
