Reviewing current equipment on new boat

Our new boat has the folowing electrical equipment on it:

Generator: Dynamica Mini 40
Watermaker: Shenker Smart 60 (20A)
Aircon: Climma Compact 17 eh
Fridge/Freezer: Frigoboat r134a / Frigomatic Paris 35 F
Batteries:
- Generator cranking: Varta G7 95Ah Car battery
- Engine cranking: Banner 100Ah P10044 Starter Battery
- House: 3 x Rolls AGM 120Ah
- Bowthruster: 2 x unknown
Alternator: Mastervolt w/ Alpha Pro
Charger: Cristec CPS2 60A (Bosch C3 attached to generator start battery)
Inverter: Uflex Mobile Power 500W

I appreciate I need to do a proper energy budget here, and that a lot depends on our exact usage, but in general:

1) Is there anything obvious on the list to consider replacing?
2) Is there anything obvious to consider adding?
3) Roughly how much solar should we consider to minimise generator usage?

We'll be cruising for several months, prefer to anchor out rather than stay in marinas, and in addition to the above will have a variety of tablets, phones and a laptop. Initial priorities are to have a decent battery charging solution, and to add enough solar to cover the fridge, freezer, lights and devices. If we can add enough solar to run the watermaker and even heat water then great.

To try and ask more specific questions: The 500W inverter seems a bit on the small side and at the moment I'm thinking about replacing with a 3000W. The current inverter is forward of the nav station with the battery bank under the aft cabin, so the cable run is ~4m.

1) By upsizing the inverter am I likely to need to upgrade the wiring from battery bank to inverter?
2) Other than the Power Assist feature, is there any advantage to replacing the charger and inverter with a Victron Multiplus?
3) Is 500W solar a sensible starting point?
