I'm surprised it's not a clear winner.
You have high voltage panels therefore, controller should kick on right away with any daylight, even Victron MPPT's with their +5v differential requirements. I own 4 of these and they are perfect for high voltage panels and relatively cheap.
Secondly you say you have "oversized" wiring. Without further detail we can infer that doubling the voltage won't provide much, if any benefit. Let us know if this isn't true.
Third, parallel should resist shading better regardless of the panel type and specifics as compared to serial.
Therefore it is much more likely that parallel would be the way to go.
Having said all of that, a semi-scientific experiment of one week one way and the next the other would be interesting if you noted the weather each day.
But if you are not interested in experimenting, set them up in parallel.

You can't run 300w (12v ). To a 15a controller. You'd need a 30a.
