South Med Canals

Looking for advice from those who have experience of entering canal system.
Ipapadi of Londonderry is a trawler type, a Trader 41, changed from a Moody 425 a couple of years ago. Having sailed across the Med since 2001 we decided we'd had enough of winching!
Knowing nothing about the canals system, we're looking for advice/comment. Presently based in Port Gruissan and maybe Sete next year. One aspect of life in this region is the 'copious' amount of wind! So, before we give up on those grounds and head south, we are wondering what our access (air draft might be within 5M if the radar was removed) would be after using the lifting bridges in Sete to get into the etang. Would we be able to get to the Rhone, even if we could, what would it be like for periodic live-aboards?
Could we conclude that moving to next berthing place in such environment would be a competition for a space as in the Agean?
Comment from folk who have done it would be very welcome.
