Shallow draft monohull

Definitely look at the 1970's centerboard monohulls. Many of the best builders - Shannon, Hinckley, Tartan - made centerboard boats in this range that were under 5ft with the board up. They faded as the racing rules changed and builders switched to cheaper, faster, and more dangerous bolt on keels.

The Hinckley Bermuda 40 (B40) is one of the sweetest sailing boats (and certainly the prettiest). It has a centerboard drawing 4.30ft. B40's have circumnavigated and won the Bermuda race multiple times.
