Summer Haulout tips

This is our first time cruising and we are hauling out in Grenada. I am used to winterizing in NC but now I am summerizing. I would love to see some tips on preping my boat for this 3 to 4 month period on the hard.

What I know:
1. Keep fuel tanks full with Biocide.
2. Open all cupboards and inside storage lockers and setees for ventilation.
3. Put outboard in lazarett, put new plug in and tighten lightly. Spray cylinder with light oil before replacing spark plug.
4. Defrost fridge and remove all food products that are not canned or bottled.
5. Close all through hulls except one to drain rain if bilge fails.
6. Remove sails
7. Remove all canvas, Dodger and Bimini
8. Pickle watermaker
9. Change Oil and filter
10. Change fuel filters
11. Get rid of extra outboard gas

Please feel free to add.

Here is one I am not sure of. I know I drain the water tanks but I have 4" inspection plates over them inside the cabin. Do I leave these inspection plates open or closed?
