Crandon Park's mooring balls are only up to 40ft, but they offered us a wet slip for $103/night. Not bad considering our size. Their low tide clearance is for 6', but there is a margin in there so we'd be ok if we came in at a few hours either side of low tide.

Kendall, eh? The rental car option is looking more and more attractive.

Even if you can get close to Kendall, you will still (a) be sailing out of your way, unless you are able to navigate the north side of the Keys (b) still need transportation into the city and (c) be spending as much or more time and money trying to go the sail-in route as the drive-in route.

There is also some kind of bus from the keys.

Key Largo is a bit closer to Miami (for driving), and has space, but suffers from shallow depths and high marina fees.

If you can do the immigration thing in Ft. Lauderdale it will be a lot easier for you. Kendall is a long ways south of Miami. You can stay at either the Las Olas moorings or one of the city marinas.

The Kendal office of the USCIS is at 14675 SW 120th Street. This is pretty far south and west of downtown Miami. It's also pretty far from the coast. You should probably plan to rent a car. Matheson Hammock Marina would be the closest marina but I don't think you could get in.
Miami-Dade County - Parks, Recreation and Open Spaces - Matheson Hammock Marina
If you can't get into the marina, you could anchor out side it and dinghy in.

Enterprise Rent a Car will pick you up and take you to their office and when you return the car they'll bring you back.

Too bad your boat doesn't fly. The USCIS office is right next to the Kendall-Tamiami Airport.

Car rental is sounding like the best option from wherever we end up.
I'll check Enterprise rates.

I'll also ring Matheson Marina and find out their limits.

Unfortunately the appointment is already set, and it's a nightmare trying to change things with government bodies.

Be sure you call an office within 5 miles of your boat's location or else they will not pick you up. Each office is a franchise and will not serve you in this way if you are too far.

I had a bad experience in Nashville.
