Gunkholing ICW

Hi all.
We wouldd like to spend our first retirement year reconecting with sailing and somewhere warm. The ICW and Florida Keys sound about right. Most of the time would be spent poking around and we are both ok with extended time "camping".
What we would like help with is identifying boats which would meet the following criteria.
1) A reliable engine.
2) A proper head. ( I confess to having thrown overboard a porta loo which leaked once too often. I was much younger and the children still talk about it.)
3) A bimini.
4) Very shallow draught.
Possible candidates are ComPac 23, SeaWard 24 or 26, MacGregor 25 or 26, Catalina 25 with swing keel. Aany further suggestions would be much appreciated, especially for something a bit larger.
Our budget is flexible. We would hope to re-sell close to what we pay for it.

Here is an extraordinary boat I would like for gunkholing. It has a minimal draft, and nice features for cruising and a very simple rig with Free Standing Masts and furling sails. It is trailerable, but has a roomy cockpit.

Take a look at the Chrysler 26, centerboard(swing keel) and standing headroom in most of the boat.

Someone just sold a 1979 Irwin Citation 30' for $4500 here. It had a 15hp Yanmar diesel engine and its centerboard keel went from 8' draft while extended to 4' draft when it was retracted. It needed a little bit of cleaning, but it was a nice boat for the price!
