Just really like the idea of good access to the mechanical and not disturbing the living space to work on it.

A new thought: I'm a delivery skipper and sail and cook a lot offshore. I seriously lean towards the 'after' galley - leaving a salon that extends the full width of the boat.
2 reasons:
1) I sleep in the salon at sea - its the most comfortable position: Pitching: Nearer the fore-and-aft centre of the boat means less pitching, and: Rolling: you can always have a bed that holds you in if you have a seat both sides of the salon!
2) An after galley means an inline sink and more possibilities to wedge yourself in when cooking.

FWIW, I recently converted my tiny corner galley into a tiny U-shaped galley. Makes a world of difference. And of course, being tiny, it's easy to "wedge in." Still a work-in-progress but I'm very happy with it so far.
