Lifting-keel Beneteau / How different are they?

Does anyone know how does the ballast effect/righting momentum work in lifting keel Beneteau models like this Beneteau 311 of the link below? Do these boats carry the same amount of ballast than the same model with a regular keel? If the keel is fully lowered, do they have the same righting momentum or do you need to reef earlier?

I imagine these models must be pretty nice for cruising shallow waters like the Bahamas and the Florida Keys.
