Inexperience couple, new to them boat...no offshore is not a great solution.

If you want to do a day hop outside once you've got a few days in and are comfortable everything is operating correct, sure but first thing doing a multiday offshore passage, not a great solution.

By staying inside and limiting the duration, you have 2 rested crew on duty and ready access to plentiful shoreside facilities for most of the trip.

Yes, the ICW has it's challenges but much more suitable for figuring things out.

Insurance is a big deal, you need a policy that covers the entire trip. At least where I sail you can't go in to a marina without it. That may be expensive and/or hard to get. A more "local" policy is often easier and cheaper to obtain.
Contact a broker and get a quote for a fantasy boat that closely resembles in size and value what you are looking for.
