As for moving anything cheaply here in Australia it is my understanding if the trailer goes on a public road then it needs to be registered and roadworthy. Then when moving any wide load you have to have permits, escort vehicles and police involved and everyone of those wants to be paid. Depending on the vessels height you made need to involve the local power company to move some powerlines as well.
Les Thompson sounds like a legend and he must have had plenty of energy to complete a cat that size.

Regulations; In North America; (Both Canada & USA) The Coast Guard has very specific codes & regulations for materials, structure, systems etc for all boats including owner built. I am surprised that Australia doesn't.
Registration; Some countries require the builder/owner to supply acredited plans as well as certificates of completion (Survey) to get the boat Registered. Bill of sale. Materials costs etc etc. In Canada it is stupidly easy/simple to register a project boat. (But dealing with the Coast Guard inspections-not so much.)
Putting an interior in a boat is very, very similar to putting an interior into a 40' Park trailer RV or 36' Motorhome RV. Replete with washrooms/showers, kitchen, hardwood floors, appliances, air con, icemakers, integral generators, solar panels, electronics as well as built in place furniture etc etc.
In Canada & USA we can build/modify trailers. Get them inspected, certified, registered very economically. We can make our own applications for wide and/or long load permits. As well as supply our own pilot, escort vehicles. If a person has the appropriate drivers license. All these factors are part of the knowledge requirements for the specific license.

NB. I was faced with $15,000+ of estimates to move 3 boats this past summer. I had built a Tri-axle trailer to move a 30' sailboat. Which was too small to move the 36' Trojan & 40' Hughes and 44' Bruce Robert's Offshore. So I am now designing a trailer to move the above 3 as well as potentially a 55'-60' Custom sailboat. The design has the provision of 3 to 7 (7000# rated) axles . I won't need a crane at each end since the trailer self loads. I can move the trailer empty. To move the trailer loaded. I just call a Heavy Tow- tow truck. Approx $200 - $600 each trip.
The subject 64' Bruce Roberts.. It would be easier to remove & reinstall a steel keel, skeg & rudder, rather than section the 64' hull. The hull trimmed (keel removed) could easily be moved on a double drop trombone trailer. (similar in appearance to what moves excavators) but extendable. The profile of boat & trailer would be less than 13'6" in height.

Try Broardwater slipway at Eden NSW good hardstand area and reasonable prices.

SO, You will see. Moving the boat isn't impossible by any means.
And it doesn't need to be crazy expensive.
How much did that move cost? I watched most of it, didn’t hear any talk of cost.

Don’t take it anywhere near a boat yard, unless you have real funds, rent any industrial land - hopefully slightly closer to water but as long as it’s possible to move it afterwards makes no sense, you sound just like me “Buy first worry about the how and where afterwards” lol your wife must be annoyed, I know the feeling
But if you can’t put it in the water you had be better thinking on 10 year timeframes - can we have a Photo ? I would love a huge sailing ship good luck
