Just to let folks know how it went here is a quick post. We replaced the thermostat and added a small hole to it. Since we already had access and I had a spare on hand, we also replaced the fresh water pump. End result: no overheat on start up !

Prior to that we checked to see if the plumbing to the hot water tank was an issue by isolated the tank. That had no impact to the overheating.

That part was cheap and easy ... now the cutlass bearing replacement, shaft alignment and rudder packing were another story ....
