The Ambassador ones sometimes click when sailing and the prop is free wheeling. It's not the blades touching, but the anvil holding the stationary cutter has a gap and this causes the noise. Racers will be horrified by the extra 0.002% extra drag.

Any idea if a simple single piece cutter with no moving parts would do the job?

I have this type on my boat (twin engines) and they have worked twice, and to my knowledge, never not worked.
