Ok the oil temp sounds identical to our YSM 8.
We find it doesnt get as hot motorsailing but if your oil temp is 60oC thats as hot as ours gets.
What is the water temp on the water galleries in the head?
Did you test thermostat in pot of water on stove before install? We are in lockdown so I cant check our water temps & my memory for where I measured water temps & what they were cannot be relied on.

I wouldnt sweat it too much if oil temp is 60oC it's running ok.
