Maybe as a very rough guide you could use the torque specs found within the C&C yachts pages. They are given based on size across the flats of the keel nuts IIRC. Specs are for clean threads, no rusty frozen washers or old epoxy smears/paint on the bits. Chart is below, bit jumbled but you can sort it out.
