Drop In Ice Chest/Cooler

Hey Crew, I am refitting the interior of a new(to me) boat. It was originally set up for short charter and the amenities are scarce below. I was wondering about using a premade restaurant style drop in ice cooler for an ice chest, does anyone have any experience with these? Am I missing an obvious pitfall? they are pre plumbed to drain and insulated. I was thinking that I could install heavier higher r value panels and filler around it, as well as insulate the lid better. They tend to be made of high quality heavy stainless steel, and seem to be an economical time and and money wise solution.
Any advice is welcome.
