Favorite upholstery fabric

The wife has decided she wants to have the interior upholstery redone sooner than later (its original from 1984). I have a local shop that does good work I'm going to use, but am looking for what material I want to use. I would prefer something that is spill resistant and soft to the touch. I'm not a huge fan of regular cloth and am looking for something that is almost like a fake suede style that is found on a lot of new boats.

Does anyone know where to source a fabric like that from, or if you have recommendations on what you like to use, or if from my really bad explanation you can tell me what the name of the fabric I am thinking of might be ?

Brisa Ultraleather was used by Catalina on many boats, I've found it very comfortable and durable, even removed blood stains easily.
