Yes, in fact we dog the hatches before leaving on passages. The latches are a kind of toggle latch, a bale of flat stock fits over the latch, then you press the toggle down. We often just put them on the latch, without pulling them down solidly. In storm conditions, you'd want them all the way down, but they sit heavily, the teak and acrylic hatches, and leaving them tight all the time would compress the gasket too much.
