Replace Standing Rigging - 2001 Beneteau 361

I am planning the replacement of the standing rigging in my Beneteau Oceanis 361 Clipper. It has not been replaced since it was built in 2001.

Any idea of possible cost? Any experience doing this in the Valencia, Spain area? Things to consider when reviewing different quotes for the service? Things to take into account when evaluating the quality of the job done?
