Dynex Dux is the best for your application. The difference between Dynex (which is one of many UHMWPE ropes) and Dynex Dux is that with the Dux the fibers have been stretched while heated. This process makes it a very different material. It is stronger, but more important to you for your steering is that it has almost no constructional stretch, meaning that you set the tension once and you're done. I've also built a steel boat, 42', and I used Dynex Dux for the helm lines. It is used for standing rigging. Very robust material.

Colligo Marine is a good source for Dynex Dux. They have lots of info on using it on boats, and a variety of hardware for terminations. Good company, and John (the owner) is a very helpful and knowledgeable guy.
