I've done the one gallon jug thing so far for local 3-6 day cruises. Plus a couple cases of 16 oz bottles)

If need be, I could carry 40-50 of those pretty easily plus maybe a couple 5 gallon jugs/containers in the engine compartment. I also have about 20 gallons in the forward tank for emergency use.

That's a pretty good start for a singlehander.

Plus I could probably stop using two gallons for bathing off the sweat and use more salt water and a one gallon rinse when cruising full time

It's hard to sleep when you have salt water/sweaty skin from the days sailing so the bath part is important I have found regardless if you are alone or not when it's hot anyway.

With the engine gone you should have a decent space, so how about a plastic tank say from Vetus:
