Looking for ideas on what to use for decking on my swimplatform. Anyone ever make foam core with rigid board insulation?

Fibreglass grating.

I actually used pressure treated 1x4" lumber, and it has held up, but in your application I like the idea of fiberglass grating, such as this stuff:

How about synthetic teak lumber?

Lots of people make foam core with various types of foam for non-critical projects like that. Lateral slats would make it lighter and less liable to catching waves and is commonly done for swim platforms. You could make foam core slats, or use wood/imitation wood.
