Sikalastic 560 is Australian/NZ Standard 4020 certified for water storage...
SikalasticR-560 is a cold applied, one component, Polyurethane modified Acrylic Dispersion, waterborne liquid applied waterproofing membrane, highly elastic and UV-resistant, primarily used in roofing.
Approved in accordance with AS 4020 and AS 4858 - Approval for Use in Potable Water and Wet Area applications.

Smells a bit like lemons when it is curing too. Gives the whole water tank a G & T vibe.

Actually, Gord, as usual, was providing relevant data.

The OP had scungy old tanks and one very simple and practical solution is to clean them and coat them with something safe. Gord has kindly linked such a coating product sold here in Australia that is suited to this purpose.

You, however, are posting a whole load of stuff about why you shouldn’t build tanks from fibreglass and epoxy. (And most of it doesn’t really say that anyway).

The OP’s tanks are already built. They are not building tanks. They just wanted to clean them and make them safely useable again.
