Extra thrust, if your boats big enough (and this one looks like it is) and you have the wallet to match why not?

Re: What are these underwater bow fittings?

It could just be one thruster with two supports. The propeller would be centered between the legs

Re: What are these underwater bow fittings?

And the winner is …!

Before getting to that though a few responses to earlier comments.

1. Why not ask someone in the yard? Difficult, since these superyachts also live in gated communities, no place or admission for regular folk like... myself. But from my rear deck I did manage to get the attention of a technician and managed to get the answer using sign language and the occasional Italian word.
2. Can't see what it is from the photo. See close up below (although sorry it's not horizontal)...
3. … and see also the photo of the earlier missing part of the boat, showing more hoses coming out from everywhere
4. I do believe it's a Wally so see some of the innovations introduced by Wally Yachts, especially item 3 in the below link

Seven Wally Innovations That Changed Sailing History (sailuniverse.com)

So yes, it's an anchor system.

Wonder when will that make its first appearance in our more regular vessels...

Cool find, well done......

Not for me though, I'll stick with the 'traditional' method I think (yes luddite)

And what is the, apparently retractable, appendage at amidships?

Come on...its a diving board. Every real yacht has one. Could be a stepping platform to be used when docked.
Here is a better pic of a submarine anchor.

That is a boarding ramp or stairs. After it comes out of the hull it extends and the end lowers down to the dock.

...or to the waterline.

Many larger sailing yachts use a side boarding ladder to bring the tender (dinghy) and guests alongside because of the stern design. The even larger ones sometimes have a platform that folds down out of the side of the hull.

Or they can also have both setups, for flexibility.

In the Med these boats are almost always stern to the dock, so a stern passarelle is also required.
