You can buy acrylic plastic cut to size at many stores throughout the world. In England it is called perspex. It is available in many colors and thicknesses to fit your needs. No need to hunt for scraps.

The material used on vessels as a backing for instrumentation today us Starboard and can be used as cover plate. It comes in black and white mainly. The material used is high density poly ethylene which is extremely durable and has uv absorbent properties BUT cannot be coated. It is one of the plastics that have no adhesion capabilities for paints. It also comes in various thicknesses and can be purchased at marine stores.

Most Marine stores, like West will sell you precut sheets. Places like Tapp Plastics that I mentioned earlier will custom cut - you don't end up with scrap that you will never use. Tapp also sells King Starboard.
