Where to build a Hardtop Bimini

I just purchased a boat in France and will be sailing the Med in an easterly direction with a possible Dec, Jan and Feb lay-up in Montenegro or Turkey. I am looking to either build myself (provided there are adequate facilities) or have built a hardtop similar to the Hylas 57 where I could install solar panels and create the appropriate enclosure around it.

Does anyone have suggestions on fabricators or DIY shops where this could be made?

France is a good place, La Rochelle, Portugal, Portimao, yards in Spain typically do not allow live aboard on the hard so DIY can be difficult.
