I looking for a drug free roommate that has extensive sailing experience.

I wish you well with your search. I suggest you add some additional details as that will likely help a lot with your searches.
A more detailed location will help as SW Florida covers a fair amount of territory.
Are you at a marina?
Are you moving around the area?
Do you have any photos of the boat and in particular, the interior?
What sort of sailing do you do?
How often are you away from your marina and for how long?
There are many other questions that come to mind and some additional information will help you save time and likely yield more suitable responses. Good luck!

What could go wrong? Plenty or nothing at all. Sven Lundin’s first transoceanic voyage had three people in an actual 20 foot tube without a deck and parted friends. I have evicted employees and sub contractors from apartments and hotel rooms where I housed them many many times when then did not meet expectations. Throwing their stuff into the sea instead of a corridor or parking lot while screaming obscenities at them would have added a nice dramatic effect.

My mum told me that the best friendships and working relationships are based on the ability to live independently when needed. It's called "private space". Maybe that's why she threw me out ...... Clear rules also need to be negotiated.

However, it may be the beginning of a very positive relationship. Best of.

Its just my 2 cents based upon past experience, but have several meetings with the applicant- 1 or 2 of them should be "spur of the moment" meetings.
Also make sure ALL rules and plans are in WRITING and signed by both parties. I am not saying you need an attorney or notary, but seriously the two of you sit down and write out everything in plain and simple language and then type it up and sign it with a witness who also signs it.

Some pertinent things to write down are tenants financial obligations to the boat and how he/she will be compensated in return. Labor obligations to the boat, do you expect them to help you sand/varnish, wash decks, help fold sails or wash down ground tackle? Any sort of "time logged in exchange for rent" situation needs clear parameters of how you keep track and value that time, $20 an hour using a time clock app? Or pencil and paper with your signature?

Fair rules laid out right away and meticulous book keeping can seriously help prevent emotions from becoming frayed and exaggerated into resentments.
