Cutting stack thru Saturday still undecided to cut her thru over or under

Ideally, you want that mounted to the cabin sole, (If not, the lower the better,) against a bulkhead with some form of heat shield behind the heater that extends to the overhead.
Alternately, free standing, but with an enclosing rail.
Stove pipe thru cabin top.

You will want to put the heat shield in before mounting the stove. Afterwards would be much more difficult & time-consuming. Tiles might be nice in such a traditional-looking boat. As Bowdrie suggests, don't forget to shield the stack as well - they get really hot too. We used a bulkhead heater to try to dry out our clothes on a Transatlantic crossing. Nice to have.

It’s too high up, as others said. On cabin sole or as low as possible.

Next, bringing it to cabin sole level looks like it makes the decision for you. It will go though like in your first picture. Through the cabin top.

Finally, the less turns in the chimney the better. A straight pipe is best.
